YUM update with RHN classic on Red Hat 7.0


I am looking to update Red Hat 7.0 and not update to Red Hat 7.3.
I have tried yum --releasever=7.0 update but this updates me to Red Hat 7.3. I installed versionlock but this has not work either. The versionlock plugin has a --releasever parameter but it states to update yum config. I am not sure how to do this.
Code:
 --releasever=RELEASEVER
                        set value of $releasever in yum config and repo files
Any solutions or suggestions?

Thank you szboardstretcher. I have tried solution #2 using versionlock with the --releasever option but without success. When I tried solution #1 and update the /etc/yum.conf with "exclude=redhat-release* kernel*" (without the quotes) I receive the following error.
Quote:
Error: unbound-libs conflicts with redhat-release-server-7.0-1.el7.s390x
You could try using --skip-broken to work around the problem
You could try running: rpm -Va --nofiles --nodigest
I do not like the suggested options to fix this.
